Chickpeas

CHICKPEA SALAD

1 – Ingredients:

​

1 can chickpeas (garbanzo beans), rinsed and drained

Celery seed or 1 stalk of celery

2 slices of onion or 2 green onions, diced

1/3 cup raisins or grapes

2 tablespoons mayonnaise

1 tablespoon spicy brown mustard

½ teaspoon dill

Freshly ground black pepper

Kosher salt   

  

2 – Follow the instructions below:

​

  • In a bowl, slightly mash the chickpeas with a potato masher or fork.

  • Add the remaining ingredients and mix well.

  • Refrigerate until ready to serve.

  • Serve on bread, tortillas, crackers, lettuce or by itself.

HOMEMADE GRANOLA

1 – Ingredients:

​

1½ cup oatmeal

½ cup coconut flakes

¼ cup dried cranberries

½ teaspoon kosher salt

½ teaspoon cinnamon

¼ cup maple syrup

¼ cup vegetable oil

​

2 – Follow the instructions below:

​

  • Mix everything except dried cranberries in a bowl.

  • Spread on cookie sheet lined with parchment paper

  • Cook at 300 for 15 minutes then stir. Bake for another 15 minutes.

  • Granola is ready when golden brown. It may feel wet coming out of the oven, but will dry as it cools.

  • Remove from oven and sprinkle cranberries.

  • If you want clumps of granola, press and tamp down before it cools.

  • Let cool, then enjoy!

Homemade Granola

HOMEMADE HONEY BUTTER

1 – Ingredients:

16 ounce mason jar

1 cup heavy cream

Cold water

½ tablespoon honey

2 teaspoons salt


2 – Follow the instructions below:

  • Fill the mason jar with heavy cream. Screw the lid on tight.

  • Shake mason jar for 5 – 8 minutes. After the first 2 – 3 minutes, it will be whipped cream. Keep shaking the jar until you hear that a lump has formed.

  • Shake an additional minute, then remove the solids from the jar.

  • Place solids into small bowl, pour a splash of cold water over the butter until you can form it into one piece.

  • Add honey and salt to butter. Mix until fully combined. Chill in the refrigerator for an hour.

3 – Add to a biscuit or toast and enjoy!

Fresh Butter

Three Teacups

GINGER TEA

1 – Ingredients:

Ginger root

Water

Honey and lemon for serving (optional)


2 – Follow the instructions below:

  • Take 2 inches of fresh ginger root. Peel and slice into thin rounds.

  • Boil water in pan.

  • Add the ginger and reduce heat to a simmer for 15 minutes.

  • Strain tea and discard ginger pieces.

  • Serve with honey and lemon.

  • Enjoy!
